lauren’s favorite “meat” balls {guest post from Somewhere In Between}

Today I want to share with you THE MOST TASTY MEAL I’VE EVER MADE. Brace yourself for greatness.

Couscous Apricot (7)Ok, let me back up & give you some background. First of all… hi, I’m Lauren. I’m a Pittsburgher, city girl through & through, & I share my blog with one of my besties, Brandi, who lives across the country & is a park ranger. We couldn’t be much more different. But one thing we share in common is the love of good food.

I have to admit, Brandi is much more advanced than I am in healthy & disciplined eating…. I’m more of the “create one majestic meal and then eat frozen the rest of the week” type. Which is partly why I love this recipe so much… super yummy, & freezes really well, meaning I can enjoy for longer than one fleeting moment of glory.

Couscous Apricot (8)

Lauren’s Favorite “Meat”Balls

1 can cannellini beans
1 cup bread crumbs
1/4 medium red onion, finely chopped
1/4 cup roughly chopped parsley
1/2 tbs. oregano
1 clove minced garlic
1/2 tsb Dijon mustard
1/4 tsp kosher salt
1/4 tsp ground black pepper
1 egg
1/2 cup crumbled feta cheese
1 tsp grapeseed oil (or olive oil)

Couscous Apricot (3)

Puree half the beans, then mix up all the ingredients (except egg & cheese) really well. Add the egg & cheese last & mix until just combined. Lay out a piece of wax paper & get to balling! (I decided to double my recipe so I could make some veggie burgers while I’m at it. I guess give it whatever faux-meat shape you prefer.) Put them in a skillet with oil for about 6 minutes on each side & you’re ready to go.

I tossed couscous, dried apricots, spinach, & cucumbers to add my “meat”balls to. And then I sat down with a glass of wine & a moment of silence to appreciate this moment. I’m not a great cook, but when I get it right I savor it.
